HACCP for food business – new guidance and standard from CCFRA

A new edition of CCFRA's long established and widely used HACCP: A Practical Guide has been published adding to the now extensive list of HACCP products and services. The new edition provides food manufacturers, processors and retailers with up-to-date, practical guidance on the development, implementation, maintenance and verification of HACCP in food and drink processing and manufacturing. This will help food businesses to use HACCP to assure the safety of their food products. This new edition takes account of recent developments with HACCP, clarifying the growing importance of "prerequisite programmes" and highlighting how HACCP has become relevant to a wider range of food businesses. It takes the opportunity to explain HACCP verification and validation in more detail and illustrates some approaches to HACCP documentation.

For companies wishing to obtain independent, third party recognition of their HACCP system against an independent standard, CCFRA has also published its HACCP Auditing Standard and the accompanying Protocol for the HACCP Auditing Standard. The standard defines the HACCP requirements that the company needs to fulfil while the protocol defines the procedures for achieving accreditation against the standard. Both the standard and protocol are also used as the basis for CCFRA's independent HACCP certification scheme and are fully compatible with the recognised Codex principles, CCFRA's HACCP: A Practical Guide and CCFRA's HACCP documentation software.

As well as food and drink companies, these publications and the software are available to auditors and enforcement bodies.
