M. Clark – Building your business and protecting profit. Looked at ways of looking at the business and increasing the numbers of sales with a focus on customer care.

Prof. Hugh Pennington – Low Dose Pathogens. Looked at HACCP as a mechanism of protection for food purchasers, with reference to a E Coli outbreak in Scotland plus other examples of hazards in non food environments.

Hazel Goulard – Controlling Allergies with HACCP. Provided an extremely useful session on the importance of caterers understanding what ingredients are in food & the effects that some may have on allergy sufferers. She also discussed the work of the anaphylaxis campaign (www.anaphylaxis.org.uk).

John Barnes – Customer Attitudes to Food Safety. Discussed the survey on this subject carried out by the Food Standards Agency which are obtaineable from the FSA.
