Microbiological risk assessment – new guidance from CCFRA

The second edition of a popular guideline document from CCFRA will help food and drinks companies to harness the benefits offered by industrial microbiological risk assessment.

Industrial microbiological risk assessment (IMRA) offers a route to improved food safety. It provides a scientifically based approach to assessing the risks presented by specific microbiological hazards, such as infectious pathogens or microbial toxins, in specific foods. Ascertaining the level of microbiological risk associated with a food can facilitate better control of that hazard through a more informed HACCP study. A properly constructed IMRA can therefore help food and drink companies to protect their customers and to mount a due diligence defence should the need arise.

The second edition of this guideline (Industrial microbiological risk assessment – a practical guide – Guideline 28) is aimed at food and drinks company technical managers. It provides a basic introduction to the concepts of IMRA – what it is, what it is not, what it can do for your business and how it relates to other quality systems. It then provides a structured step-by-step guide on how to undertake an IMRA from start to finish, and how to prepare and interpret risk profiles. To demonstrate its practical basis, reference is made to three actual IMRA studies, which are included as a separate volume with the guide.
